Crisp fried lady fingers / Kurkure Bhindi

Before frying

Ingredients

350 – 400 gms lady fingers / bhindi

1 tsp dhania / coriander powder

1 tsp jeera / cumin powder

½ tsp haldi / turmeric powder

½ tsp chilli powder

1 tsp amchur

2 tbsp besan / gram flour

1-2 tbsp oil for coating + oil for frying

1 tsp salt (or to taste)

Putting it together

Wash the bhindi and pat dry with a kitchen cloth  (or wait for it to dry out). Once dry, chop both the ends off and then slit the bhindis into halves lengthwise. Set the bhindi aside in a bowl and add masala – amchur, dhania, jeera, salt, turmeric, chilli and besan. Mix well with the bhindi (Some of the seeds will fall out, don’t stress over it). Let it rest for at least half an hour (or leave it in the fridge for longer).

Shallow fry the bhindi in a little oil till they are crisp.

Enjoy it with dal and rice or rotis or on their own as a snack!
