A waffle is probably my favourite snack with a cup of coffee when I am out in town on the weekend. A few years ago, I made a few changes to my diet and stopped eating bread and other baked goods that contain plain white flour. Waffles became a challenge. I have tried a few alternative recipes and this one is probably the one I enjoy most.
Ingredients
1 dl breakfast oats, ground fine
1 tsp baking powder
1.5 dl oat milk
1 egg
2 medjoul dates, pitted and chopped
2 tbsp coconut oil
Putting it together
Combine all the ingredients in a blender and whisk to a smooth batter.
Leave the batter to stand for 15 – 20 minutes.
Heat the waffle iron. Spray with a little oil and then pour batter into the iron without filling it up. Close and cook until golden brown.
