My search for healthy snacks continues. This time with biscuits. I use a little maple syrup but you can use more, if you like.

Ingredients
150 gms buckwheat flour
100 gms dessicated coconut
100 gms almond flour
1 teaspoon green cardamom powder
pinch of salt
1/4 tsp bicarbonate of soda
3 tbsp maple syrup
125 gms soft butter
2-3 tbsp dry melon seeds (optional)
Putting it together
Mix all the dry ingredients together in a bowl.
In a small bowl, soften the butter and mix in the maple syrup.
Add the butter and syrup mixture to the dry ingredients and mix well. The mixture will be dry and crumbly. Leave covered for 15-20 mins.
Cover a baking sheet with baking paper and set oven to 160C.
Form small balls (approx. 20 -24 depending on size) and flatten them evenly before placing them on the baking sheet. Remember to leave a little space between the biscuits.
Bake at 160C for 15-20 mins until the biscuits are cooked and light brown in colour.
Cool and pack in an airtight container. Enjoy!
