I bought some dark chocolate a while back and did not make the cake I had planned to.
The cookies turned out really great! If you’re looking for a delicious, chewy, chocolate cookie then give these a try. 😋


Ingredients (makes 12-14 cookies)
- 150 gms almond flour
- 3 tbsp unsweetened cocoa powder
- ½ tsp baking soda
- Pinch of salt
- 60 ml melted coconut oil
- 60 gms brown sugar
- 1 egg (I used a large egg)
- 1 tsp vanilla extract
- 100 gms dark chocolate bar (70–85%), chopped into small pieces
Optional
- Maldon flaky sea salt to sprinkle on top before baking
Putting them together
- Preheat oven to 175 °C (350 °F). Line a baking tray with baking paper.
- Whisk together the almond flour, cocoa powder, baking soda, and salt.
- In another bowl, mix melted oil, sugar, egg, and vanilla until smooth.
- Combine wet and dry ingredients; stir until just mixed. Mix in the chocolate pieces.
- Scoop 12-14 portions onto the baking tray using a tablespoon. Flatten slightly.
- Optional – Sprinkle very lightly with flaky salt, a few grains on each cookie.
- Bake on the middle rack for approximately 12 minutes, until edges are firm and centers are slightly soft.
- Leave the cookies on the baking tray to cool and firm up for 10-15 minutes.
