Dark Chocolate Almond Cookies

I bought some dark chocolate a while back and did not make the cake I had planned to.

The cookies turned out really great! If you’re looking for a delicious, chewy, chocolate cookie then give these a try. 😋

Ingredients (makes 12-14 cookies)

  • 150 gms almond flour
  • 3 tbsp unsweetened cocoa powder
  • ½ tsp baking soda
  • Pinch of salt
  • 60 ml melted coconut oil
  • 60 gms brown sugar
  • 1 egg (I used a large egg)
  • 1 tsp vanilla extract
  • 100 gms dark chocolate bar (70–85%), chopped into small pieces

Optional

  • Maldon flaky sea salt to sprinkle on top before baking

Putting them together

  1. Preheat oven to 175 °C (350 °F). Line a baking tray with baking paper.
  2. Whisk together the almond flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix melted oil, sugar, egg, and vanilla until smooth.
  4. Combine wet and dry ingredients; stir until just mixed. Mix in the chocolate pieces.
  5. Scoop 12-14 portions onto the baking tray using a tablespoon. Flatten slightly.
  6. Optional – Sprinkle very lightly with flaky salt, a few grains on each cookie.
  7. Bake on the middle rack for approximately 12 minutes, until edges are firm and centers are slightly soft.
  8. Leave the cookies on the baking tray to cool and firm up for 10-15 minutes.
