Earlier this summer, we were invited to spend a couple of days at Jomfruland. The weather as you can see was perfect for grilling. The lemon infused grilled chicken we had one evening was amazing. I decided to try this recipe out after we got back to Oslo.

Ingredients
8 deboned chicken thighs – skin removed
juice of 1/2 a ripe lemon
olive oil ( approx 2-4 tbsp) – to make a marinade that coats all the chicken pieces
2 tbsp fresh oregano leaves chopped fine ( or 1 tbsp dry oregano)
2-3 garlic pods finely chopped ( use a garlic press instead of chopping, if you have one)
salt & pepper to taste
Putting it together
Make small slits on the outer surface of the chicken thighs and add them to a flat bowl.
Add the rest of the ingredients and mix well, using your hand to rub the marinade into the chicken.
Cover the bowl with plastic foil. Alternatively, you can move the mixture to a zip lock bag before leaving the chicken to rest in the fridge.
Remember to take the chicken out of the fridge at least an hour before grilling. We chose to grill the chicken over a foil to get the process started. Once the chicken was cooked slightly, you can remove the foil and grill the pieces directly.
Tip – Grill a couple of lemons cut in half. The lemon juice from grilled lemons is fantastic. Enjoy this with the chicken together with a salad or a simple couscous.
